El funcionario precis\u00f3 que se buscar\u00e1 que se permita ver al guanaco como un recurso y no como un problema: \u201cCreemos que la fibra y carne de guanaco pueden ser una salida para controlar la especie\u201d, se\u00f1al\u00f3 Alonso.<\/p>\n<p>Este tema tiene una larga data de discusi\u00f3n en toda la Patagonia. en enero del a\u00f1o 2015, en la provincia de Santa Cruz, finaliz\u00f3 el desarrollo del plan destinado al control del guanaco, como una manera de salvaguardar el patrimonio santacruce\u00f1o, aunque qued\u00f3 a la espera de la homologaci\u00f3n desde Naci\u00f3n para levantar las restricciones a la exportaci\u00f3n. Participaron de la comisi\u00f3n redactora integrantes del Consejo Agrario Provincial; de la Universidad Nacional de la Patagonia Austral; del Instituto Nacional de Tecnolog\u00eda Agropecuaria, de la Federaci\u00f3n de Instituciones Agropecuarias de Santa Cruz. Tambi\u00e9n referentes provinciales del \u00e1rea de Fauna de Chubut, del Ministerio de Agricultura, Ganader\u00eda y Pesca de la Naci\u00f3n, el Servicio Nacional de Sanidad y Calidad Agroalimentaria (SENASA), la Secretar\u00eda de Medio Ambiente y Desarrollo Sustentable de la Naci\u00f3n, el Consejo Nacional de Investigaciones Cient\u00edficas y T\u00e9cnicas (CONICET), cient\u00edficos del Grupo de Especialistas en Cam\u00e9lidos Sudamericanos (GECS), el Ministerio de la Producci\u00f3n de Santa Cruz y la Asociaci\u00f3n Ambiente Sur.<br \/>\nLo m\u00e1s destacable de este plan era que en \u00e9l se definieron aspectos para preservar y conservar la especie. Lo que se pretende es controlar racionalmente al guanaco y adem\u00e1s, utilizar un recurso que tiene, seg\u00fan los analistas, mucho potencial por su fibra y por su carne.<br \/>\nSeg\u00fan un informe del diario Cr\u00f3nica, en el a\u00f1o 2000, el cient\u00edfico argentino Jorge Amaya realiz\u00f3 el Primer Censo A\u00e9reo de la Patagonia para contabilizar la cantidad de guanacos que exist\u00edan. La CITES (Comisi\u00f3n Internacional de Tr\u00e1fico de Especies Silvestres) supon\u00eda que hab\u00eda en ese entonces en toda Argentina unos 200.000, pero el censo se\u00f1al\u00f3 que en Santa Cruz hab\u00eda aproximadamente entre 220 y 240 mil guanacos, y en toda la Patagonia, unos 450 mil.<br \/>\nEn 2006, se public\u00f3 el Plan Nacional del Manejo del Guanaco, que fue elaborado por la Secretar\u00eda de Medio Ambiente y Desarrollo Sustentable de la Naci\u00f3n, un plan incompleto y parcial, al entender de algunos productores. Entre las cr\u00edticas que le hicieron a dicho plan fue que contemplaba s\u00f3lo utilizar como recurso la fibra de los animales recuperados en cautiverio.<br \/>\nEn 2013, se realiz\u00f3 un nuevo Censo A\u00e9reo entre el CAP y la UNPA, el cual arroj\u00f3 que en ese a\u00f1o exist\u00edan aproximadamente 1.000.000 guanacos y que el n\u00famero de animales crec\u00eda un 15% por a\u00f1o, lo cual significa el 70% de los guanacos que hay en la Rep\u00fablica Argentina.<\/p>\n<p>Mientras tanto, el sector privado contin\u00faa con diversas capacitaciones sobre el uso comercial de la carne de guanaca, como es el caso de la Asociaci\u00f3n de Empresarios Hoteleros Gastron\u00f3micos de R\u00edo Gallegos, quienes junto al Consejo Agrario Provincial, realizaron hace pocos d\u00edas el segundo taller profesional de \u201cGuanaco, una aventura patag\u00f3nica de sabor\u201d.<br \/>\nEn la apertura del taller participaron la presidente de la Asociaci\u00f3n Rosalia Cartelli, el titular del Consejo Agrario Provincial Javier de Urquiza, el director de Turismo Municipal Paulo Lunzevich junto a Joaqu\u00edn Olivares del Instituto Austral de Gastronom\u00eda.<br \/>\nDe la actividad participaron chefs, cocineros y responsables de cocina de los establecimientos gastron\u00f3micos de la ciudad, donde se les brind\u00f3 informaci\u00f3n sobre tipificaci\u00f3n y caracter\u00edsticas de los cortes e informaci\u00f3n t\u00e9cnica general, las propiedades de la carne de guanaco, sus caracter\u00edsticas, posibles usos, tipos de cortes y cocciones para la elaboraci\u00f3n de platos, con la finalidad que puedan generar propuestas culinarias comercial en los establecimientos gastron\u00f3micos.<\/p>\n<p>Fuente: Diario de
